Ode to my friend who doesn’t like cheese……

Today is my soul brother´s birthday and he doesn’t like cheese. I still love him even though he doesn’t like cheese. One time I had a boss who didn’t drink coffee or alcohol. But, I really didn’t like him. I have never understood how one can live without cheese. I guess I did when I was a vegan for a few years but I didn’t know anything about life back then.  My soul brother knows a lot about life and he still won’t eat cheese. Who orders a ham and cheese omelet without the cheese? My soul brother does.  If it were someone else, I would definitely question this or find it extremely annoying. How do they possibly live without cheese? Did something happen to them at birth? Maybe the anti-cheese midwives delivered them. But, I would never question my soul brother. Because he has so many other redeeming qualities.  Like dipping a banana in yogurt at breakfast, EVERYDAY! Wanting to always know the “plan” but then just rolling with it without question. Getting random piercings with me just because we feel like it.  We have fun just walking down the street, doesn’t matter what the weather is like. We are happy with a snowfall in Philadelphia, the blazing heat in Sevilla, huddling in a cold wind storm in Madrid, or with the perfect breeze of the seashore in Southern France. He won’t eat cheese in France. But, I still love him. We have a lot of photos that document our friendship. I look at some of them and think, we were just babies! We have photos under castles, next to windmills, in plazas and in bars, lots of bars. We even have a photo together riding a camel. The funny thing is that we have a photo of one of our favourite bars in Sevilla and it is a photo of cheese. There is also one in that bar with olives. But, the one that I remember the most is with cheese. Did you eat that cheese? Why can’t I remember if you like that cheese? I am getting old. Today you have added one more trip around the sun, but you always look the same. Luna always used to say, “Alex never changes.” Don’t ever change, dear soul brother. I love you just the way you are, even if you don’t like cheese. 

The long road home….

I’ve heard some people comment about being bored these days as we are on lock down. I believe in Spain we are now on the 16th day. As my doctor ordered, I can’t even leave the front door of my apartment for the allowed reasons so I look out onto the street from my balcony and windows. I can see the Sierra Nevada Mountains freshly covered in snow. The road up to the Alhambra is now completely still except for a public bus every few hours and the streets are silent except a random masked and gloved neighbor coming home with groceries. Police cars patrolling and a random dog walker. However, I have not been bored even for a second. I cook and write and do exercise and give some online yoga classes and enjoy other great classes along with concerts and virtual visits to many places. I was trying to remember the last time I was actually bored I couldn’t come up with anything really.

And then I remembered being in the town of Manzanares in Castilla La Mancha last August. I wouldn’t call it boring, but definitely peaceful. We spent a glorious 15 days in the Basque Country, both France and Spain. We never want to leave so we push it as much as we can and end up driving at full speed home before vacation ends. Manzanares is a bit over 2 hours from home and as we were getting close we decided we just couldn’t drive anymore. It was hot as hell and we were exhausted.

There is a Parador in Manzanares that by a miracle has not been closed down regardless of its location with a view of the main highway. Paradors for me, mean home. As my friends who work at the Parador in Santiago de Compostela tell me, I’m no longer a “friend” of the Paradors, I’m a sister. Paradors are a chain of hotels in Spain opened in mostly historical or important buildings. You can look on the internet at parador.es and discover more. The page also has a blog where you can find different bits of history and art work and routes through Spain. A couple of weeks ago they closed down all of the paradors and donated all of the food from their restaurants and bathroom amenities to help with the corona crisis.

The Parador in Manzanares was one of the first, opening in 1932. It opened originally as an “albergue” to give truck drivers a place to sleep and eat on this long, empty road. It survived the Civil War and the dicataorship. It is said that in the 1940’s when tourism began the restaurant served lunch to so many tourists that some would have to wait in busses while the others were being served. In 1979 the original albergue closed, reopening in 1980 as a “Parador de Turismo”. The Parador has fought to remain open through financial crisis and more. At first glance this Parador might not seem to be anything special. However, our short stay here was perfect. Our room looked out on the swimming pool and garden and everyone was incredibly friendly, from the front desk to the bar and restaurant. We decided to have a light dinner in the hotel due to the blazing heat and to avoid the walk into town. We are also big fans of all Parador dining. The Maitre D in the restaurant was so lovely. He made us feel like the only people in the restaurant. He invited us to a glass of sparkling wine from the local wine producing area to accompany our tapa of partridge paté and chips.

One of my all time favorite dishes from Castilla La Mancha is Pisto Manchego. My very favorite is at a place called La Venta de Quijote in the sleepy town of Consuegra. I have been stopping there for years with groups and their pisto along with the one here at the Parador are both outstanding. Pisto is a mixture of sauteed vegetables which can vary depending on the area and the chef. The original recipe is made with tomatoes, green peppers and zucchini chopped and without the seeds. Sauteed with a good amount of olive oil and seasoned with salt and pepper. It can be used to accompany fish or meat or on its own served with a fried egg or two on top.

If you ever find yourself in Manzanares in the dead of August when most bars are closed and the heat is unbearable please go to the Queso Manchego Museum. Manchego is one of the most well known cheese’s worldwide. Not be confused with Mexican Manchego cheese which is similar to a Monterey Jack, true Manchego must be prepared with whole Manchego sheep’s milk and aged for at least 60 days in one of the designated provinces of Castilla La Mancha. You can find four different types of Manchego: fresh, semi-cured, cured and aged. There are 26 Protected Designation of Origen (DOP) producing different types of cheese in Spain. We have an incredible variety to work your way through in this lifetime. However, Manchego is usually the one that most visitors know about before arriving in Spain thanks to our dear friends, Miguel de Cervantes and Don Quijote.

The museum is run by friendly, young people from Manzanares. You can visit for free or pay between 1 to 2,50 euros for a tasting of cheese and wine. The museum walks you through the history of Manchego Cheese dating back to the Bronze Age. It has informative plaques that explain how the cheese making has changed throughout history and also how it forms such an important part of Castilla La Mancha and the cuisine in this area.

Manchego Cheese is sliced in triangles and served as a perfect tapa with bread and wine. Add some local olives to complete your appetizer. Many times you will find it served with a quince paste that pairs perfectly with the nutty flavor of the cheese.

Another part of the museum is dedicated to temporary and permanent art exhibitions. It is like a little added surprise after you walk through the area about the manchego cheese. The temporary exhibition that we saw was a beautiful tribute to the Spanish Poet, Federico García Lorca and the Bullfighter, Ignacio Sánchez Mejías. Lorca was from a town close to Granada, Fuentevaqueros, and was assassinated in 1936 during the Spanish Civil War. He was a renowned poet, playwright and theatre director. Mejías, a bullfighter from Sevilla and friend to poets and poetry, died after being gorged by a bull in his comeback bullfight in 1934. He had slept and eaten his last dinner the night before at what is now the Parador de Manzanares. He was remembered by many poets in their works but probably the most well known is by Lorca, Weeping for the Death of Ignacio Sánchez Mejías.

The entire temporary exhibition was absolutely beautiful. A wonderful tribute to many different Spanish poets as well. After we finished our tasting of cheese and wine we went for a hot walk and had lunch at one of the few open restaurants before driving home to Granada. We found this beautiful hotel which is now closed. It was all more than worth the stop!! A great break in our long drive home.

A place to return to someday……part 1.

Just a bit less than half way to North America when leaving Lisbon you will find one of the most beautiful archipelagoes in the Atlantic. The Azores or Os Açores in Portuguese consist of 9 volcanic islands and is one of two autonomous regions of Portugal. The other being Madeira. Most people choose to visit the islands between April and November when the weather is at its best and you can enjoy the numerous beaches and hiking on the islands. Our favorite time to travel is the off season when the crowds are less and you can easily distinguish the locals from travelers so we went to the Azores for New Years and the first week of January a couple of years ago.

It tends to rain in January but the sun came out quite a bit and allowed us to hike and have some beautiful views as we discovered the island of São Miguel. This is one of the first three islands that were initially sighted and discovered in the 14th and 15th centuries. The first inhabitants to the islands were actually sheep who were placed there to eventually feed the first settlers who included the Portuguese mostly from the Algarve and the Minho, the Flemish, the French, and Sephardic Jews amongst others. When the Spaniards temporarily took over Portugal in 1580 they also wanted the Azores. It is said that cattle were released by the Azoreans to confuse and scatter the invaders. Still today we found more cows than humans on the Ilha Sao Miguel which for me is just perfect! They filled our photos at every scenic outlook and blocked the roads.

One of my favorite places on the island was Sete Cidades , which is the name of a town and also a spectacular nature area. It is probably one of the most beautiful panoramas I have ever seen. There is a viewpoint where you can look down on the two lakes that fill in the center of a volcanic crater. Lagoa Azul reflects the blue color of the sky and Lagoa Verde reflects the rich green color of the earth. Hiking in this area is greatly rewarded by a local lunch in the town.

Everything we ate during our stay was excellent. All diary products were superb from the milk to every cheese that we tasted, especially the fresh cheese served at the hotel breakfast and the Queijo São MIguel which is easily found throughout the mainland as well. Beef was aplenty and we had a few amazing dishes from simple to fancy. They also produce great wines to accompany the local food. Wine production has nearly doubled here in the past years, most of it being produced on the Island of Pico.

I had never tasted a “limpet” before the Azores. It is like an aquatic snail with a cone shape. We tried the limpets at a restaurant right on the beach. They were grilled and served with lemon. Simple and plentiful. Maybe not my favorite dish but it was fun to taste them. I definitely need a second try on our next visit.

After lunch we walked through the small and obviously poor town of Rabo de Peixe. We stumbled upon a solemn funeral procession of a young man from the town. The air was heavy with humidity and grief. Everyone was dressed in what must have been their best clothes, paying their regrets to the loss of a young life. I remember the feeling in this town more than I remember the taste of the limpets. The obvious poverty and solemness was very different from what we had experienced up until this moment on the island. Real life and death. To be continued……

Places in my heart……Burgos

Certain cities will always make me feel like I’m home and Burgos is one of those. Maybe it is because the first time I visited I was a young and tired pilgrim looking for a simple bed and some decent food. The albuergue or pilgrim’s refuge used to be in a park on the outskirts of the city. It was quite rustic but I have fond memories of the communal sleeping area, the outdoor picnic tables and ice cold shower and I had returned with student groups many times to share the experience with them before it closed. There is a scene in the movie “The Way” where they walk up to the gates of this park and I am always rushed with emotion every time I see it. The municipal albuergue is now in a lovely building close to the Cathedral.

Santo Domingo De La Calzada

Burgos is elegance and humility in one. The people are kind yet not exuberant, the pedestrian areas and parks are classy and filled with statues representing the historical and cultural importance that the city holds. The local gastronomy is a mixture of comforting and hearty food with the elegance and detail of modern cuisine. It is a friendly city where one feels comfortable as a visitor or a pilgrim.

The statue of Santo Domingo de la Calzada near the roman bridge in Burgos represents this man known for the construction of bridges, a hospital, roads and a church to help the pilgrims whom he had observed from where he lived as a hermit in the 12th century. There is a town named after him in the same place where he passed away and it continues to be a sacred place for all who walk the French route of the pilgrimage.

The Santa Maria of Burgos Cathedral rises high over the city center. It’s poise and beauty honors hundreds of years of architectural geniuses from its groundbreaking in 1221 up until the 18th century. The main architect of the Cathedral in Granada , Diego de Siloé, was born in Burgos and is responsible for the gilded staircase in the Cathedral of Santa Maria in Burgos. We will also find here the remains of Rodrigo Díaz de Vivar, otherwise known as El Cid, along with his wife Jimena.

Last summer I was in Burgos with a group of students. I have been working with this school as long as I can remember. It was the Spanish day of sign language and the gate of Santa Maria was reflecting the color for this once the sun went down. One of the students in my group was losing her hearing due to an illness and had been learning sign language. We spent this amazing moment sharing with this lovely group of people from Burgos. They loved being with the students and teaching us new signs. It was one of those moments of gold that you never forget.

I’ve slept many times at a hotel that looks right out onto the Cathedral. The name is Meson del Cid and I loved waking up in the morning atnd having my first view be of this amazing Cathedral. I plan on sleeping there again very soon with a lucky group! It’s amazing how life is a circle.

Burgos has an amazing gastronomical scene. There are certain things you need to eat when you are visiting such as Morcilla de Burgos (blood sausage with rice), Burgos fresh cheese, river crabs, trout, suckling pig and so much more! All washed down with amazing wine.

An albacore tuna with olives, anchovy and a vinaigrette that I ordered was out of this world. It ranked next to some of the best pintxos I’ve had in the Basque Country. We also had some grilled ribs with potatoes that were humble and flavorful at the same time. Followed by a martini glass layered with egg yolk, pork cheeks and spicy potatoes, we were good to go!

Everything we ate in Burgos this summer was absolutely amazing but one of my favorite memories was from this small bar next to the Cathedral. The tapa came with our wine and we enjoyed it thoroughly along with the great ambience of the bar on a summer evening. Thank you Burgos for reminding me how much I adore being close to you and that I need to bring people there very soon!! I have so many memories here and cannot wait to make more.

Finally a moment to sit down and reflect on the past year.  It is amazing how time flies when we are busy and running about from place to place.  In the past few months on tour I have had many a day when I thought of what a beautiful summer we had in our trusty and very old van.  We had many beautiful experiences in France, always going off the beaten path to find a bit of local flavor and new, albeight brief friendships.

The day before we entered into the French Pyrenees we followed a sign and our hearts to a beautiful country home and family who sold their own homemade sheep´s cheese.  We drove up and up and up until we landed at their gorgeous house, and were greeted by their friendly dogs who licked Luna to a special type of cleanliness.  The woman explained the entire process of how they produced their cheese and allowed us to taste each type.

We happily purchased a large wedge which was the base of many future meals for us and lasted all the way to Granada, one month later!! After our happy purchase, we eventually found one of the most beautiful places to sleep, right next to a river and a couple of very friendly French families.  Our trip was filled with daily gifts like this, a viaje we will never forget.

Enjoying the Little Things in Life

One of the most important things I have learned is to appreciate the smaller moments in life. To be present and relish the time we share with others and also alone. In Spain we have a saying that expresses this perfectly. “La vida son cuatro dias.” Life is only four days long.” Enjoy, and don’t let life pass you by without experiencing it to the fullest. In Spain much of this theory revolves around sharing food and drink. We can always find time to enjoy just a little bit of this and a little bit of that. I have many favorite places where I do this in Granada and in the cities that I pass through frequently.

There is a beverage and a small bit of something delicious to fit any moment or feeling. A chilled glass of dry sherry served with olives and cheese filled peppers served by a gentleman in a white jacket and bowtie is a nice way to share a conversation with a friend an early evening in Barcelona. Or a bit of hard cider before lunch while peacefully looking out at the Bay of Biscay. And in Sevilla, I love to have a glass of sweet sherry accompanied by a bit of fresh cheese with quince paste and rosemary as I kick back and listen to the lively atmosphere around me. These are just some of the moments that I have treasured along this beautiful road we call life.

Ham or Jam, however you want to spell it…………

ImageThe only thing more important in Spain than futbol (soccer) is ham.  Jamòn, be it Ibèrico, Serrano, Pata Negra, de Trevèlez, let ham live!   I have to be honest and admit that I pretty much avoid the average tapas bars in Granada that slap down a piece of ham and bread for a tapa. I don´t like bad ham.  I´d rather drink a cheap wine than eat cheap ham. I prefer jamòn ibèrico but I have also learned to appreciate cured ham from the lower Sierra Nevada Mountain range here in Granada.  Jamòn de Trevèlez.  However, if given the choice, I prefer cheese.  Always have, always will.  All cheese.  Soft, sweet, stinky, hard. I love it all.

When “Jam” first opened in Granada I would walk by the large windows and peer in while inhaling the deep smell of cured ham.  The name of the tapas bar made me laugh.  Ham, but in Spanish with a J.  Finally, one day we decided to give it a try.  I’m yet to be dissapointed by their tapas and cheese platters.

ImageThey have an amazing wheel of Stilton cheese that they fill with Pedro Ximènez, a dark and sweet sherry.  It is out of this world and the reason to order a cheese platter.  It is accompanied by a nice selection of cured manchego´s and reggiano.  The tapas are also delicious.  On one afternoon we enjoyed a great marinated dogfish with red cabbage and teriyaki chicken with a sweet and sour cabbage salad.

ImageImageSave the best for last they say, no?  The bonus dessert at “Jam” is an explosion of flavor in your mouth.  Cured ham covered with dark chocolate and topped with a bit of stilton, a walnut, and a bit of quince paste.  It doesn’t get much better than this!!

wine, history, and nature……….

Is there anything better than the smell of a wine cellar? For me, there are few smells that are equal to that complexity.  A sweet yet profound passion that slowly intoxicates your soul. Usually the first thing I do when I step into a wine cellar is close my eyes and slowly inhale.  It is an aromatic reminder that something beautiful is about to happen.

Recently we enjoyed a visit to a beautiful Wine Hotel just outside of Salamanca. The enchanting Hacienda Zorita is home to a unique winery, hotel and spa.  It was, in the 14th Century, a Dominican Monastery and you can still visit the chapel “San Nicolás de las Viñas” which is home to some of the best wine in the country along with a collection of religious artwork from the 16th, 17th, and 18th centuries.  Jaime, one of the founding partners of the Hacienda took us on a guided tour of the winery and then hosted one of the finest wine, olive oil and cheese tastings that I have ever experienced.

After the wine tasting we were treated to a relaxing and informal dinner in the River Cafe.  Since my truly angelic daughter had sat through the very long tasting while quietly nibbling on pieces of apple and delicious bread dipped in golden organic olive oil, it was the perfect meal for us.  A simple cheese plate and delicious arugula salad were her personal favorites of the evening.

The grounds of the hotel were so beautiful that regardless of the subzero temperatures we took full advantage of the walking trails and the beautiful sound of the River Tormes. I look forward to my next visit to Zorita.


needing some warmth………..

Winters in Granada are not as horrible as they can be other places I realize, but nonetheless I get tired very easily of the cold.  I prefer heat, hot sun, sand on my body and a cool drink in my hand.  So, after all too many days of battling a nasty winter flu I have been dreaming of summer.  Ahhhhhhhhhhhhhhhhh, sweet and enjoyable summer.  I have many food and cultural posts still for winter but today I need to feel the hot sun on my skin. If only through a blog.  So, my dreams take me back to Asturias where we enjoy spending a bit of each summer vacation.  Hard cider, great food, and a sunny day on a pristine beach are what brings us back year after year.  The sunny day can be a give or take since Asturias tends to be fairly rainy.  But, we usually luck out with sun for 90 percent of the time. 

  Each year we return to the same rural hotel (another post) where we always feel welcome and have a chance to decompress between campground and campground.  From this beautiful home there are hiking trails that will take you to different towns, beaches, restaurants, and the breathtaking look out at  Cabo Penas.  One of our favorite beaches to walk to is Verdicio.  First we stop at a nearby restaurant along the national highway and then we make our way down to the beach area which kindly offers a small hut serving hard cider whenever you feel the need. 

We had a fantastic meal at a cider house,  La Fustariega before heading down for a swim.  French fries ( or chips) smothered in a sauce made with the best cheese in Spain, Cabrales.  Cabrales in its pure form will make your eyes water, nose run and your stinky tennis shoes smell like roses.  It is delicous.  A raw milk cheese that is cured in an extremely humid cave in the high Picos de Europa Mountains until it is covered in mold and  striped with lucious blue veins.  Asturias is famous for its cheese and Cabrales is one that is honored in competitions each year. 

The other typical dish that we devoured before ordering desserts was Pastel de Cabracho.  According to gastronomical history this dish was first prepared by the famous Basque Chef, Juan Mari Arzak.   The fish (black scorpian fish) is boiled first in a stock, deboned and then mixed with a mixture of tomato, heavy cream and sometimes leek and carrot.  It is formed into a pudding and cooked in a double boiler.  It is normally served as an appetizer with homemade mayonnaise.  When it is prepared well, Pastel de Cabracho is not to be missed. 

We ended our meal with two mouth watering desserts.  Simple and delightful.  A creamy rice pudding topped with cinnamon and a typical Asturian cheesecake.  It was the perfect meal to fuel us for our short walk down to the beach where the sun and a cold bottle of hard cider awaited us. 

                         

Tapa Time!!………

Tapas are a way of life in Spain.  Small, simple dishes of food that vary depending on the region and the restaurant.  The word tapa simply means “cover” or “lid” since originally a slice of cheese or ham was placed over a glass of wine.  Whether this was done either to keep the flies out or simply because someone decided it is preferable to have some sustenance along with your beverage of choice, the outcome shaped an important part of this culture.  This is  my first of many posts dedicated to the “tapa”.

Where I live in Granada tapas are free.  Not just in the city, but in the entire province (county).  There are many places throughout the country where you will be given a bite of something when you order a drink, be it olives or a small dish of paella.  But in Granada, the tapa  enters into a whole different dimension.  During “tapa time” which happens between 1 p.m and 3:30p.m. and then again from 8p.m. to 11 p.m. more or less, you are given a free tapa with each drink you order.  In many bars you are simply given a different tapa with each drink where in others you are given a list of tapas to choose from.  The assortment varies from bar to bar and can include anything from fried fish, meatballs, cured ham or a Spanish omelet to fried eggs with potatoes, snails in a spicy sauce or a  small baguette with pork tenderloin and tomato.  The list is endless.
